Tropical Sunrise Muffins

I gave these muffins the name Tropical Sunrise because that's what they remind me of - not that I have that much experience with tropical sunrises, mind you. These healthy muffins are bursting with banana, mango and coconut - there's the tropical for you - and are the perfect breakfast or mid morning coffee break snack. (Not exactly sunrise, but hey.) They freeze well, too, so you can have them whenever you need a little tropical sunrise in your life.

In a large bowl, combine the flour, white whole wheat flour, sugar, brown sugar,

salt and baking powder. In a measuring cup, combine the milk, egg and yogurt.

Whisk until smooth, then add to the flour mixture.

Stir just until moistened. Add the banana and mango to a food processor

and pulse until mostly pureed but a few chunks remain. Add the fruit to the batter

then stir in the coconut.

Divide the muffin batter among 12 muffin cups that are either lined with paper or sprayed with nonstick cooking spray. For the streusel, combine the flour, sugar and coconut. Cut the butter into cubes and add it to the topping,

cutting in until the mixture resembles coarse crumbs. Generously sprinkle the streusel over the muffin batter.

Bake for 20-25 minutes until the muffins are golden and a toothpick tester comes out clean.

Let the muffins cool in the pan for a couple minutes, then carefully transfer to a wire rack to cool completely.

Very Simple Blueberry Muffins

Weekend guests at my house usually mean that I do a little extra baking, so Sunday morning breakfast included these blueberry muffins for my son and DIL visiting from Nashville. Because I'm heading to Bean2Blog this week, I wanted to give them a sample of some of the goodness that comes from baking with soy. This recipe is so easy and quick to make, it's one to save and bake often.

Recipe adapted from GoDairyFree

Print Recipe

Very Simple Blueberry Muffins

1 1/2 cups flour
1/2 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
3/4 cup soy milk (I used the vanilla flavored kind)
1/4 cup oil
1 cup blueberries

Preheat oven to 400 degrees F. Prepare a standard muffin pan with paper liners. In a large mixing bowl, combine flour, sugar, salt, and baking powder. Add soy milk and oil, mix together. Fold in blueberries. Spoon batter into prepared pan and bake for about 25 minutes. Makes 8 muffins.

These are super great muffins, but I have to admit I have never met a blueberry muffin that I didn't like. Because they are made with soy milk, they are perfect for those with milk allergies. Soy is also a wonderful source of protein. I'm looking forward to collecting more great soy recipes at Bean2Blog this week.

Any Day Brunch {Eggland's Best Eggs}

The word brunch can conger up countless images in a person's head. Long buffets filled with all the favorites: eggs, bacon, sausage, French Toast, potatoes, etc. Holiday meals surrounded by family and friends. Lazy Sunday mornings drinking coffee and enjoying the morning paper. But for most of us, all the images are connected by one thing, happy people enjoying delicious food; and I'm here to say brunch doesn't have to be saved for a special occasion. Brunch can be a meal your family enjoys any "not so special" day, any time of the year. And with help from my friends at Eggland's Best, my family did exactly that a couple weeks ago.

It was a Sunday like most other Sundays at our house. It was the 3 of us at home, sleeping in, and catching up on things around the house. But I had a little surprise up my sleeve that neither of my "boys" knew about~ I was going to treat them to a yummy brunch, filled with recipes from Eggland's Best. Their site has entire section dedicated to delicious recipes using their fantastic eggs, including a Breakfast Burrito and Sunny Side Breakfast Pizza, just to name a couple; but there are so many more to choose from.

Have you ever tried Eggland's Best eggs in your home? Well, if you haven't, let me give you just a few reasons why you should! Compared to ordinary eggs, Eggland's Best contain:

10 times more Vitamin E
Double the amount of Omega-3's
Twice the amount of Vitamin D
3 times more Vitamin B12
25% less Saturated Fat
38% more Lutein

As parents, we understand the importance of feeding our families nutritious food that provides them with power and energy to go through the day. With March being National Nutrition Month, it's a great time to reevaluate the foods we are all using in our kitchen every day, so we can feel confident we are giving our loved ones healthy foods to help them grow. And with Eggland's Best, we know just that!

When I began planning my brunch, and scouring the many recipes on the website, I was immediately drawn to not one, but two mouth watering dishes. The first I'm sharing today was our "starter". The teaser if you will. The thing I brought them to the table with, only to be followed by something equally scrumptious.

Plus, this recipe was so simple, it was a great opportunity to get little man into the kitchen with me. He loved stirring, mixing and helping any way he could.  If you're going to treat your family to a brunch, why not make them a part of it too? Get the kids into the kitchen with you, and make the entire thing a family event!

They thought they were getting ordinary blueberry muffins, which they would have been happy enough about, but little did they know when they bit into one, there was an extra surprise waiting on them. A creamy, lime flavored filling! And for my lime-loving boys...oh what a treat it was! They were absolutely thrilled!

I think these would be a fantastic addition to your Easter brunch, or if you're like me, your any day, ordinary, every day brunch!

Come back on Friday to see the main dish of my Sunday brunch, another great idea for this Easter weekend too!

Banana Coconut Pecan Muffins

This is one of the best breakfast muffin recipes I have come across in a while. These muffins are made with healthy ingredients, and the taste is wonderful! I know not everyone is a banana fan, but I think there will be some quick banana converts if they try these moist, delicious muffins made with demerara sugar and coconut milk.

Flourless Banana Muffins

I love trying new varieties of muffins. These are a unique take on banana muffins, using no flour but full of goodness from the oats, yogurt and of course, banana. They come together in a snap - just throw all the ingredients in a blender, blend away, and then bake!

Well, I just gave you the instructions, but I'll repeat myself. I used a food processor for this, but you can use either a blender or a processor. Combine the eggs, baking powder, baking soda, bananas, yogurt,

sugar,

and oats.

Blend until combined, then pour into greased muffin cups. Bake for 20-25 minutes or until a toothpick comes out clean.

So I Was Thinking...

Many times when I sit down to plan my menu for the following week, one of the places I find inspiration is right here on EMM. I look at previous menus, or posts, to see if there is anything that was so yummy we are already hungry for it again, to remember what side dishes I served with certain meals, or even to think of new ways to twist something I've already made into something new. I figure if it was delicious the first time around, if I find a new idea from it, that will end up being just as delicious. That was exactly how this recipe came to life. I was reading over some menus from August and September and came across my Corn Dog Muffins. Now they were a big hit with my boys, and I really liked them too, I just wasn't ready for them again. But then I started thinking. What if I used a couple different variations of ingredients and turned them into a breakfast item? Well, a breakfast item we would have for dinner. It didn't take very long to figure out exactly what I would do and they turned out better than I could have hoped. The only think I was worried about was drying out in the oven, but they were moist and fluffy. If your family likes breakfast for supper as much as we do, a batch of these and some scrambled eggs make for a quick weeknight meal. Plus, we are a family of dippers...sausage into syrup...so with these, the work was done for us! Or, are you expecting a full house for Thanksgiving? These would make a great Black Friday breakfast after everyone returns from the mall tired and starving. And as a note, even if you don't think your family can eat all 12 in one sitting, make the entire batch because they freeze beautifully and are a simple, warm breakfast on a rushed school morning. (Or if that full house scenario applies to you, make these a few days before they arrive, freeze them, and when the holiday is here, breakfast is already taken care of!) Sometimes the best inspiration can come from the most obvious place...myself!

Pancake Sausage Muffins
2 c. Bisquick baking mix
1 c. milk
2 eggs
1/2 c. real maple syrup
1 (10 ct) box Banquet frozen breakfast sausages (In freezer section)
1/2 c. water

Preheat oven to 350. In a small skillet add sausages and water. Bring to a boil. Reduce heat and cook about 5 minutes. Drain on paper towels. Slice each sausage into 4 pieces. Set aside. In a large mixing bowl combine baking mix, eggs and milk. Whisk until smooth. Spray a 12 piece muffin tin with cooking spray. Fill each well half way with pancake batter. Place 3 sausage pieces into each well, pressing down slightly. Bake for 15 minutes or until a toothpick comes out clean. Heat syrup for 1 minute in microwave. When muffins are done, brush with maple syrup as soon as you remove them from oven. Allow to sit 2-3 minutes before removing from tin. Serve with extra syrup for dipping, if desired.

1 cup all purpose flour
1 1/2 teaspoons baking soda
6 tablespoons butter, softened
3/4 cup sugar
5 teaspoons lemon zest, divided
2 eggs
1 cup half-and-half
3 tablespoons lemon juice
1 (2 ounce) bottle crystallized ginger (or about 1/2 cup), rinsed, dried, and chopped

Preheat oven to 375 degrees F. Prepare muffin pans with non-stick cooking spray or use paper liners. In a small bowl, combine both flours and baking soda; mix with a fork.
In a separate bowl, cream together butter and sugar; beat in 2 teaspoons lemon zest. Add eggs one at a time, beating after each addition. Add half-and-half and lemon juice and mix until combined. Add flour mixture and stir just until flour disappears. Gently stir in chopped ginger. Spoon batter into prepared muffin cups and sprinkle tops with remaining lemon zest. Bake for 18 - 20 minutes, or until muffins test done. Makes 18 muffins.

Chocolate Chip Mini Muffins

The inspiration for these muffins came to me last week when I had lunch with my grandson at his school. His mom packs a lunch for him every day, and inside his lunch box that day was a little package of chocolate chip mini muffins. They were the store-bought kind, and they looked very soft and tasty, but surely a store brand muffin couldn't be as good as a home baked muffin. I went home that afternoon intent on finding a recipe for muffins that would look like, but taste better than, his packaged muffins.

After comparing several recipes, I decided on a recipe from Wilton, and I have adapted it slightly to be more like the packaged muffins that I wanted to copy. The original recipe at the Wilton site has cocoa powder to make the muffins chocolate flavored, and there is a glaze recipe that can be added if desired.

Chocolate Chip Mini Muffins

3/4 cup all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 package (4 ounces) cream cheese, softened
2 tablespoons butter, softened
1/4 cup granulated sugar
1 egg
1/4 cup sour cream
1/4 teaspoon vanilla extract
1/4 cup mini chocolate chips

Preheat oven to 350 degrees F. Prepare a mini muffin pan by spraying with cooking spray. In a small bowl, combine flour, baking powder, and salt. In a large bowl, beat cream cheese with an electric mixer until smooth and creamy, about 3 minutes. Beat the butter into the cream cheese. Add the sugar, egg, sour cream, and vanilla; beat to combine. Stir the flour mixture into the cream cheese mixture just until combined. Gently blend in the chocolate chips. Divide the batter evenly in prepared pan, filling each muffin cup 2/3 full. Bake in preheated oven for 8 - 12 minutes, or until top of muffin springs back when touched. Remove from oven and cool 5 minutes in pan. Remove muffins from pan and place on a cooling rack. Makes 24 mini muffins.

Cool the muffins in the pan for 5 minutes.

Remove the muffins from the pan and place on a cooling rack.

With only 1/4 cup of sugar these muffins aren't too sweet, and the cream cheese and sour cream combination gives them a light texture with a wonderful flavor. These little muffins are great for breakfast or for a snack, and if you're lucky there will be a few left to pack as a lunchbox treat!

Raspberry Streusel Muffins

One day this summer while mowing the lawn at my new house, I made an exciting discovery: raspberry bushes! I was so excited, and even more so when my neighbors said I could have as many as I wanted from their bushes too! I ate a lot of raspberries this summer, and enjoyed every one.

I love raspberries with yogurt, on ice cream, in custard bars, in blondies, and now in these muffins. What a delicious way to start the day.

Let's get baking! In a large mixing bowl, combine the sugar, oil and yogurt.

Beat until well combined, then add the eggs, vanilla and milk.

Mix this until all the ingredients are incorporated. In a small bowl, combine the flour, baking powder, baking soda, salt and cinnamon.

Gradually add the flour mixture to the wet ingredients, beating on low until all the dry ingredients are moistened. Then gently fold in the raspberries.

For the streusel topping, combine the flour, brown sugar, oatmeal

and cinnamon in a food processor or regular bowl. Cut the butter into chunks then throw it in.

Pulse this mixture several times until you have coarse crumbs - or else you can cut in the butter with knives, a pastry blender or your fingers.

Line a muffin tin with paper liners, or grease the muffin cups. Then fill the cups with the muffin batter.

Top with a generous sprinkling (about a tablespoon or more) of the streusel.

Bake the muffins for about 17-20 minutes or until golden. Cool on a wire rack. Hooray for raspberry bushes!

Raspberry Streusel Muffins

Muffins:
1/2 cup vegetable oil
3 eggs
1 cup plain or vanilla Greek yogurt
1 1/3 cups sugar
1 1/4 cups milk
2 tsp. vanilla
4 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2 cups raspberries (fresh or frozen)

Streusel topping:
1/2 cup flour
1/3 cup brown sugar
1/2 cup oatmeal
1/2 tsp. cinnamon
4 Tbsp. butter, diced

In a large mixing bowl, beat together the oil, yogurt and sugar. Add the eggs and vanilla and beat well. In a small mixing bowl, stir together the flour, baking powder, baking soda, cinnamon and salt. Gradually add to the wet ingredients, mixing just until combined. Carefully fold in the raspberries.

To make the streusel topping, in a small food processor, combine the flour, brown sugar, oatmeal, cinnamon and butter. Pulse several times until the mixture resembles coarse crumbs. (Alternatively, combine the dry ingredients in a small bowl and cut in the butter with two knives or your fingers.)

Fill greased or paper-lined muffin cups with the muffin batter (I fill nearly to the top) and then sprinkle on about a tablespoon of streusel. Bake at 400 for 20 minutes. Cool completely on a wire rack. Makes 24-30 muffins.

Peaches 'n' Cream Muffins

I love baking with summer fruits - and this week I got inspired when I had one ripe nectarine to use and a container of peach yogurt that got opened but not eaten (ahem, fickle breakfast-eating child I was caring for...) So I decided to make muffins! These are extra moist because of the yogurt and are studded with delicious chunks of peach (or nectarine as it were).

Start by combining the egg, yogurt

and sugar in a large mixing bowl, and beating until well blended. Add in the flour,

baking powder, salt and nutmeg and beat just until combined. Measure the half and half and add in the vanilla, and add this to the muffin batter,

beating until the liquid and the dry ingredients are incorporated. Add the peaches, and stir to combine.

Grease muffin pans or use liners - we made mini muffins cause I was working with a preschooler, and mini muffins are just more fun!!! (They're also more dangerous in my opinion, cause it's easy to keep poppin' 'em in your mouth...)

Bake for 17 minutes. Let them cool in the pan for a couple minutes, then carefully remove from the pan to a wire rack. Cool completely.

These are absolutely delicious as is, and when topped with cinnamon and sugar (like the cinnamon sugar muffins), they are extraordinary.
