Orange Yogurt Mini Muffins

I had plans to make these muffins about two weeks ago. I bought the orange yogurt for the recipe, and one thing led to another until today I looked in the refrigerator, and the yogurt was nearing expiration. So today became the day the muffins got baked. My recipe is adapted from the Better Homes and Gardens site, recipe.com. I have added toasted pecans to my muffins, because that's the way I like them.




Orange Yogurt Mini Muffins
1 3/4 cups all purpose flour
1/2 cup sugar
2 teaspoons orange zest
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 (8 ounce) carton orange flavored yogurt
1/3 cup cooking oil
1 teaspoon vanilla
3/4 cup chopped pecans, toasted

Glaze
1/2 cup sifted powdered sugar
1 to 2 teaspoons orange juice

Preheat oven to 400 degrees F. Lightly grease 36 mini (1 3/4-inch) muffin cups or use paper liners. Set aside.
In a large mixing bowl, whisk together flour, sugar, orange zest, baking powder, baking soda, and salt. Make a well in the middle of the flour mixture; set aside.
In a medium mixing bowl, slightly beat egg. Stir in yogurt, oil, and vanilla. Add egg mixture all at once to the flour mixture. Stir just until moistened. Batter will be lumpy. Fold in toasted pecans.
Spoon batter into prepared muffin cups. Bake in preheated oven about 10 minutes or until tops of muffins are golden. Cool in pan on wire rack for 5 minutes, remove from cups and cool completely.
For glaze, stir together the powdered sugar and enough orange juice to make a glaze of drizzling consistency. Drizzle or brush glaze over the muffins.


I like to use paper liners when I bake in a mini muffin pan because it makes the clean up quicker and easier.


Let the muffins cool before you add the glaze. They're good without the glaze, too.
