I baked cookies today, and they are made with some very wholesome ingredients. Not only are they sweetened with honey, they contain whole wheat flour, wheat germ, orange juice, and orange zest. These cookies are so full of flavor, I don't think the children will notice the healthy ingredients!
The recipe for Orange Coconut Drop Cookies was adapted from a little specialty cookbook Wholesome Cookies by Jane Marsh Dieckmann.
Beat the egg well, then add the oil and honey. Add the orange zest and the orange juice. Stir in the flour, wheat germ, and salt. Blend in coconut and walnuts.
I like to bake cookies on parchment paper. I sprayed the paper lightly with nonstick cooking spray because the original recipe called for a greased cookie sheet.

Orange Coconut Drop Cookies

1/2 cup honey

1/2 cup chopped walnuts
Preheat oven to 350 degrees F. Prepare a baking sheet by lightly greasing or line baking sheet with parchment paper and spray lightly with nonstick cooking spray.
