Today I baked blueberry muffins, and this version is a little off the beaten path. I have a large collection of blueberry muffin recipes, and every recipe in the collection is there because it is my favorite for a different reason. These are different because they contain white chocolate chips and cinnamon along with the blueberries. I love them, but you'll just have to try them for yourself! The recipe that I used for Alien Blueberry Muffins comes from Just Berry Recipes.
Fill the muffin cups almost full of batter. Paper liners will save some clean-up time.
After baking, remove from pan to a wire rack to cool.
These muffins have the usual goodness of blueberry muffins with the unusual added treat of white chocolate chips inside!
Alien Blueberry Muffins
1/3 cup butter, melted
1 cup milk
1 egg, lightly beaten
1/2 cup sugar
2 cups all purpose flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 cup white chocolate chips
1 cup blueberries
Preheat oven to 400 degrees F. Prepare a muffin pan by spraying with nonstick cooking spray or use paper liners. In a bowl, combine the melted butter, milk, egg, and sugar. Add the flour, baking powder, and cinnamon; mix to combine just until the dry ingredients are incorporated. Stir in the white chocolate chips; carefully fold in blueberries. Spoon batter into prepared pan. Bake for 15 - 20 minutes or until muffins test done. Makes 12 muffins.
