A Lemon Pie for Peggy

I had lunch one day last week with my friend Judy. She told me that her mother, Peggy, was a reader of my blog, but that she was wanting some recipes for sugar free desserts. I'm been thinking about Peggy and her request all week, wondering what I could make that would be both a yummy dessert and sugar free at the same time. I hope I've found a recipe that will do it all. I've had the recipe in my notebook for quite some time, and I believe it came from a recipe swap at a Weight Watchers meeting.

Lemon Pie
3 cups low fat milk ( 1% or 2%)
2 boxes Sugar Free instant Vanilla Pudding mix (1 ounce each)
1 pkg. Crystal Light - lemon flavor
1 (8 ounce) container Cool Whip
2 prepared reduced fat graham cracker pie crusts

Mix instant pudding mix with 3 cups milk until smooth.

Add an individual packet of Crystal Light drink mix and a container of Cool Whip to the pudding mixture; mix until blended.

This makes enough for two pies, so we need two prepared graham cracker crusts.

Divide the filling between the two crusts. If desired, garnish with lemon slices; chill.
