Apple Bundt Cake



Every year, I look forward to fall so I can make this cake. It smells so delicious while it bakes, and it tastes even more so. It's wonderful with vanilla or caramel ice cream, or as a quick breakfast (!). I think the ultimate compliment about this cake came from my brother, who "only" eats chocolate cake with chocolate frosting but devoured this cake on a recent visit.

You won't need a mixer for this cake, and it comes together really quickly, after you get the apples peeled, cored and chopped.

Once the apples are chopped, sprinkle them with 5 Tbsp. of the sugar,



and then the cinnamon,



and stir well to cover all the apples.



In a large mixing bowl, combing the sugar and eggs, then add the oil



and the orange juice.



Next add the vanilla and whisk all until it is completely blended. (This is where my camera ran out of charge, sorry. You can just make this cake yourself to see all the next steps!)

Add the flour, baking powder and salt into the batter and stir until combined. Grease and flour a bundt pan, then spoon 1 1/2 cups batter into the pan. Top with half the apples, then half of the remaining batter, the rest of the apples, and the rest of the batter. (So there are 5 layers: batter, apples, batter, apples, batter.)

Bake the cake at 350 for 75-90 minutes , or until a toothpick comes out with moist crumbs attached. (this is long enough to re-charge your camera, just fyi)



Cool in the pan for 15 minutes, then loosen the cake from the pan and remove. Cool on a wire rack for at least 45 minutes.

5 Tbsp. sugar
2 tsp. cinnamon
2 1/2 cups sugar
1 cup oil
1/4 cup orange juice
4 eggs
1 tsp. vanilla
3 cups flour
3 1/2 tsp. baking powder
1/2 tsp. salt

Place prepared apples in a small mixing bowl and sprinkle with 5 Tbsp. sugar and cinnamon. Stir well so that apples are completely covered in the mixture.

In a large mixing bowl, combine the 2 1/2 cups sugar, oil, orange juice, egg and vanilla. Stir well until mixed thoroughly. Add the flour, baking powder and salt and stir until combined.

Grease and flour a bundt pan. Spoon 1 1/2 cups of batter into the pan and top with half of the apple mixture. Layer half of the remaining batter over the apples and then the rest of the apples. Finally, top with the remaining batter.
