Garlicky Shrimp and Spinach Pizza



I love garlic. And I love a pasta dish at Macaroni Grill that has garlic, shrimp, spinach and pine nuts in a buttery garlic sauce. So I decided to replicate it in a pizza! And it's delicious!

I made the crust in the bread machine - if you don't have one, you can just use your mixer and knead by hand. If you're using the bread machine, add the flour, sugar, yeast and spices into the bread machine.



Then add the cheese, water, oil and garlic.



Set the machine to the dough setting. While the crust is being made, you can make the sauce. Melt the butter in a small saucepan, then add the flour, mustard, pepper and salt and cook til bubbly.



Add the garlic,



then the milk and cook and stir until thickened.



Remove from heat and add the parmesan cheese.



When the dough is finished in the breadmaker, remove and press onto a large pizza pan or stone.



Bake the crust for 10-12 minutes at 425.

While the crust is baking, prepare the toppings. Start by heating a skillet over medium heat and adding 1 Tbsp. olive oil. Saute the mushrooms and garlic for about two minutes.



Then add the spinach.



Saute just until the spinach wilts - it will cook down a lot! I used about 3 cups baby spinach and it seemed like hardly anything after cooking it.



Remove the crust from the oven and top with the cheesy garlic sauce.



Then add the mushroom and spinach mixture.



Then add the chopped shrimp.



Finally, top with the mozzarella cheese!



Bake 10-15 minutes or until bubbly and golden. Yummmmm.....

1/2 cup shredded mozzarella cheese
2 Tbsp. olive oil
3 cups bread flour
1 1/4 tsp. Italian seasoning
3/4 tsp. salt
1 Tbsp. minced garlic
1 tsp. active dry yeast

Sauce:
1 Tbsp. butter
4 1/2 tsp. flour
1/4 tsp. ground mustard
1/8 tsp. cayenne pepper
1/8 tsp. salt
1 cup milk
1/4 cup shredded parmesan cheese
1 Tbsp. minced garlic

Toppings:
1 Tbsp. olive oil
1 cup fresh sliced mushrooms
3-4 cups fresh baby spinach
1 Tbsp. minced garlic
8 oz. cooked shrimp, chopped
1 1/2 cups shredded mozzarella cheese

For the crust, add all crust ingredients to the bread machine pan in the order recommended by your machine manufacturer. Set the machine to dough setting. When completed, remove from bread machine and press out onto a large pizza pan or stone. Bake at 425 for 10-12 minutes.
